Ingredients:
- 2 Tbsp. olive oil
- 6 thin (1/2-inch thick) center-cut pork loin chops
- kosher salt and freshly-ground black pepper

- Caramelized Apples
- 3 large Granny Smith apples
- 1/4 cup butter
- 1/4 cup diced onion
- 1 tsp. cinnamon
- 1 Tbsp. brown sugar
- 1/4 tsp. kosher salt
- 1/2 cup frozen apple juice concentrate, thawed
Preparation:
- Heat olive oil in a large skillet over medium-high heat.
- Season pork chops with salt and pepper on both sides.
- When oil is hot, place pork chops in pan. Do not move. Allow them to cook 1-2 minutes on each side or until done.
- Remove to a plate, and cover loosely with foil to keep warm.
- To make the caramelized apples, peel and slice the apples. Heat the butter in a medium skillet over medium heat. Add the apples and onion.
- Cook, stirring occasionally, until the apples and onion soften. Do not let them brown.
- Add the remaining ingredients. Bring to a boil, then reduce heat to medium-low.
- Let the apples simmer until they are tender and nearly all the liquid is absorbed.
- Serve over pork chops.
