Spaghetti and Meatballs

Spaghetti and meatballs is one of my "go to" recipes, because I know everybody in the family likes it. I've even served this spaghetti and meatballs recipe to company, because everyone loves it.

Caesar salad and garlic bread are the perfect accompaniments for this recipe.

Yield: 4-8 servings

Ingredients:

  • For the Meatballs:
  • 1 large egg
  • 3 slices white bread
  • 1 lb. ground beef
  • 1 lb. ground pork
  • 1/2 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1 Tbsp. Italian seasoning
  • 1 tsp. kosher salt
  • 1 tsp. freshly-ground black pepper
  • 3 Tbsp. olive oil
  • For the Spaghetti Sauce:
  • 1 cup diced onion
  • 1 cup diced red or green pepper
  • 1 Tbsp. minced garlic
  • 1 28 oz. can crushed tomatoes (such as San Marzano)
  • 1 14. oz. can diced tomatoes
  • 1/2 cup red wine
  • 1/4 cup tomato paste
  • 1 Tbsp. Italian seasoning
  • kosher salt and freshly-ground black pepper to taste
  • 16 oz. spaghetti
  • chopped fresh parsley and grated Parmesan cheese for garnish

Preparation:

  1. Make the meatballs first: Beat egg in a large bowl.

  2. Place bread in a food processor and pulse until coarse crumbs are formed. Add to the egg.

  3. Add next seven ingredients (through pepper) and mix well with your hands. Form into bite-sized meatballs

  4. Heat olive oil in a large (12- or 14-inch) skillet. Brown meatballs in 2-3 batches in the olive oil. You do not need to cook them through, as they will finish cooking in the sauce. Remove meatballs to a plate.

  5. If there is more than one tablespoon of oil left in the skillet, drain all but one tablespoon of the oil. Add the onions and red pepper to the skillet.

  6. Cook, stirring occasionally, over medium heat until soft, but not browned. Add garlic and cook another minute.

  7. Add remaining sauce ingredients. Bring to a boil, then reduce the heat to medium-low.

  8. Add the meatballs back to the sauce and let simmer, 15-20 minutes.

  9. Meanwhile, prepare the spaghetti according to the package directions.

  10. Place the spaghetti in a large serving bowl. Top with the meatballs and sauce. Garnish with chopped fresh parsley and grated Parmesan cheese, if desired.
