Steak fajitas are a quick and easy dinner that's perfect for families. Not only do steak fajitas cook quickly, but they can easily be assembled according to each family member's tastes. Set out the toppings in small bowls, and let everyone assemble their own steak fajitas.
Ingredients:
- 1/4 cup olive oil
- juice of 2 limes
- 1 Tbsp. cumin
- 1 Tbsp. mild chili powder
- 2 cloves garlic, minced
- 1 tsp. ground coriander
- 1-1/2 lb flank steak
- 1 medium onion, sliced
- 1 medium red pepper, sliced
- kosher salt and pepper to taste
- 10 8-inch flour tortillas
Preparation:
- Whisk together olive oil, lime juice, cumin, chili powder, garlic and coriander. Pour into a large zip-loc bag.
- Add the flank steak. Seal. Turn the steak to make sure it is well-coated with the marinade. Place in a large dish in the refrigerator. Marinate 15 minutes to one hour.
- Remove meat from the refrigerator and let it come to room temperature for 5 minutes. Meanwhile, heat a cast iron skillet or grill pan over medium high heat. Lightly oil skillet by dipping a paper towel in vegetable oil and spreading over the skillet or pan.
- Grill steak over medium-high heat until it reaches desired doneness, about 3-5 minutes on each side for medium-rare.
- Remove steak to a carving board to rest for 6-10 minutes.
- Add onions and red pepper slices to the grill pan. Saute until soft, 5-7 minutes.
- Slice steak thinly, against the grain, and return it to the skillet. Cook another minute to allow the flavors to come together.
- To serve, place some of the steak and vegetable mixture in the middle of a flour tortilla. Top with guacamole, shredded cheddar cheese, sour cream, and salsa, if desired. Fold over the sides of the tortilla, and eat.
