This blueberry fruit dip recipe takes only minutes to prepare, and it makes a terrific snack or dessert for the summer or any time. Feel free to adjust the sweetener to suit your tastes. When fresh blueberries are in season, and they are extra sweet, you can use less sugar. If you're using frozen blueberries or blueberries that are very tart, you may need to add more sugar.

I like to serve this fruit dip with fresh fruit, cookies and/or pieces of cake.

Yield: 6-10 servings

Ingredients:

  • 1 cup part-skim ricotta cheese
  • 1/2 to 2/3 cup powdered sugar
  • 2 Tbsp. whipped cream cheese
  • 1-1/2 cups fresh or frozen blueberries, plus a few extra for garnish
  • 1 Tbsp. lemon juice

Preparation:

Place all of the ingredients (except a few blueberries for garnish) in a food processor, fitted with a metal blade. Process until well combined. Garnish with fresh blueberries.

Serve this dip with chunks of pound cake or angel food cake, fresh strawberries, fresh pineapple chunks, chocolate sandwich cookies, ladyfingers, graham crackers, cinnamon pita chips or broken sugar cone pieces.

Note: Start with 1/2 cup of the powdered sugar. Taste, then add more sugar if the dip isn't sweet enough for you.
