Hard Boiled Eggs Benedict Casserole
This egg casserole recipe is ideal for special occasion brunches and potlucks. This egg casserole is like a cross between eggs benedict and deviled eggs. Chopped hard-boiled eggs and prosciutto are folded into a cheese sauce, then poured over toast in this creamy egg casserole recipe.Ingredients:
- 1/3 cup all-purpose flour
- 2 cups milk
- kosher salt and freshly-ground black pepper
- 1 cup shredded cheddar cheese
- 6 hard-boiled eggs, chopped
- 1/2 cup diced prosciutto or ham
- 3-4 dashes hot sauce
- 6 slices Italian bread, toasted
Preparation:
- Whisk flour, milk, salt and pepper together in a medium saucepan. Heat over medium heat, stirring occasionally, until thickened.
- Add cheese.
- Remove from heat. Stir in chopped hard-boiled eggs, ham and hot sauce.
- Place toast slices in a 9 x 13 baking dish. Spoon egg mixture over toast slices.
Makes 6 servings.
