Hard Boiled Eggs Benedict Casserole

This egg casserole recipe is ideal for special occasion brunches and potlucks. This egg casserole is like a cross between eggs benedict and deviled eggs. Chopped hard-boiled eggs and prosciutto are folded into a cheese sauce, then poured over toast in this creamy egg casserole recipe.

Ingredients:

  • 1/3 cup all-purpose flour
  • 2 cups milk
  • kosher salt and freshly-ground black pepper
  • 1 cup shredded cheddar cheese
  • 6 hard-boiled eggs, chopped
  • 1/2 cup diced prosciutto or ham
  • 3-4 dashes hot sauce
  • 6 slices Italian bread, toasted

Preparation:

  1. Whisk flour, milk, salt and pepper together in a medium saucepan. Heat over medium heat, stirring occasionally, until thickened.

  2. Add cheese.

  3. Remove from heat. Stir in chopped hard-boiled eggs, ham and hot sauce.

  4. Place toast slices in a 9 x 13 baking dish. Spoon egg mixture over toast slices.
Serve immediately.

Makes 6 servings.
