Raspberry Cream Cheese Baked French Toast

Baked Stuffed French Toast Recipe

This baked French toast recipe has an almost cheesecake-like filling of cream cheese, raspberry jelly and chocolate chips, making it a decadent breakfast worthy of special occasions. I like to serve this baked stuffed French toast on holidays.

Prep Time: 8 hours, 30 minutes

Cook Time: 50 minutes

Total Time: 9 hours, 20 minutes

Yield: 8-12 servings

Ingredients:

  • 4 oz. cream cheese
  • 1/2 cup raspberry jelly
  • 2 Tbsp. chocolate chips
  • 1 loaf French bread
  • 6 large eggs
  • 1 cup milk
  • 1 cup half and half or light cream
  • 1/2 cup granulated sugar
  • 1/4 tsp. salt

Preparation:

  1. Spray a 9 x 13 pan with cooking spray.

  2. In a medium bowl, stir together cream cheese, raspberry jelly and chocolate chips.

  3. Cut French bread into 1/2-inch slices. Spread cream cheese mixture over half of the bread slices. Top with remaining bread slices to make sandwiches. Place sandwiches in prepared pan in a single layer. Cut sandwiches if necessary, to fit.

  4. Whisk together remaining ingredients. Pour over French bread sandwiches, turning several times to coat well.

  5. Cover and refrigerate 8-24 hours.

  6. Preheat oven to 350 degrees F.

  7. Bake French toast, covered, 30 minutes. Uncover, and bake another 15-20 minutes. Let the baked French toast rest 5-10 minutes before serving.

  8. Serve with powdered sugar and syrup.
