Baked French Toast with Praline Topping

This baked French toast is a wonderful recipe to make for holidays and special occasions, because you can make it the night before and bake it in the morning. Despite the fact that this recipe is very sweet, it's actually somewhat healthy, thanks to the addition of tofu in the egg custard. You won't taste it, but it does add protein to this tasty brunch recipe.

Yield: 8 servings


  • 1 loaf French bread
  • 6 large eggs
  • 2 cups milk
  • 1 cup half and half
  • 3 very ripe bananas
  • 3 oz. extra firm tofu
  • 2 Tbsp. sugar
  • 1 tsp. vanilla extract
  • 1 tsp. cinnamon
  • For Praline Topping:
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/2 cup chopped pecans


  1. Spray a 9 x 13 dish with cooking spray. Slice French bread, and place in prepared baking dish, making two layers and squeezing and cutting bread to fit.

  2. Place eggs, milk, half and half, bananas, tofu, sugar, vanilla and cinnamon in a blender. Blend until smooth. Pour the mixture over the French bread slices. Cover with foil, and refrigerate overnight.

  3. Remove the French toast casserole from the refrigerator. Preheat oven to 350 degrees F.

  4. Heat butter and brown sugar in a small saucepan over medium heat, stirring occasionally, until the sugar is dissolved. Add pecans and cook until they absorb some of the caramel sauce, a minute or two. Pour over the French toast casserole. Bake, uncovered, 35-40 minutes until the casserole is puffy and golden brown.
