Taco Casserole Recipe
This taco casserole recipe is a convenient weeknight dinner, because most of the work can be done in advance and thrown in the Crockpot. About a half hour before serving, just layer the ingredients and bake.Serve with Mexican salad and cornbread.
Prep Time: 15 minutes
Cook Time: 6 hours, 30 minutes
Ingredients:
- 1 lb. ground beef
- 16 oz. pasturized processed cheese, such as Velveeta
- 14 oz. can diced tomatoes
- 4 oz. can diced chiles
- 10 oz. tortilla chips
- 8 oz. shredded cheddar cheese
Preparation:
- Brown ground beef in a skillet. Drain.
- Combine ground beef, processed cheese, tomatoes and chiles in a Crockpot. Heat on low 4-6 hours or high 2-3 hours.
- Preheat oven to 350 degrees F.
- Spread tortilla chips over the bottom of a 9 x 13 baking dish.
- Stir ground beef mixture in Crockpot. Pour over tortilla chips. Top with shredded cheddar cheese.
- Bake 15-20 minutes until cheese is melted.
