Taco Casserole Recipe

This taco casserole recipe is a convenient weeknight dinner, because most of the work can be done in advance and thrown in the Crockpot. About a half hour before serving, just layer the ingredients and bake.

Serve with Mexican salad and cornbread.

Prep Time: 15 minutes

Cook Time: 6 hours, 30 minutes

Ingredients:

  • 1 lb. ground beef
  • 16 oz. pasturized processed cheese, such as Velveeta
  • 14 oz. can diced tomatoes
  • 4 oz. can diced chiles
  • 10 oz. tortilla chips
  • 8 oz. shredded cheddar cheese

Preparation:

  1. Brown ground beef in a skillet. Drain.

  2. Combine ground beef, processed cheese, tomatoes and chiles in a Crockpot. Heat on low 4-6 hours or high 2-3 hours.

  3. Preheat oven to 350 degrees F.

  4. Spread tortilla chips over the bottom of a 9 x 13 baking dish.

  5. Stir ground beef mixture in Crockpot. Pour over tortilla chips. Top with shredded cheddar cheese.

  6. Bake 15-20 minutes until cheese is melted.
Serve immediately.
