It isn't hard to get kids to eat vegetables when you prepare them in tasty ways. Here are some of my favorite healthy vegetables for kids. (Yes, some of these recipes contain cheese, butter or sugar. That may not be as healthy as steaming, but it does make vegetables more palatable to children, and it's far healthier for kids to eat green beans with browned butter than French fries, isn't it?):

Everybody has a different definition of healthy - low fat, low sugar, low carb, low calorie? When it comes to cooking for kids, my emphasis is on high nutrition. These healthy desserts not only have less fat, sugar and calories than many desserts, but they also have more vitamins, antioxidants and fiber, too. Check out:
  • Yogurt Sundaes - The waffle cone bowl, chocolate chips, fresh raspberries and drizzle of honey give these sundaes the look and taste of ice cream sundaes, but with less fat, more protein and fiber.
  • Low Fat Brownies - These start with a regular brownie mix!
  • Healthy Chocolate Chip Cookies - Less fat and sugar and more fiber make these chocolate chippers a nice alternative without sacrificing flavor.
