This Chinese chicken salad recipe makes a delicious lunch or light dinner. With crunchy chow mein noodles, sweet mandarin oranges and rotisserie chicken breast, this Chinese chicken salad is sure to be a hit with the kids.

Ingredients:
- 1 8-12 oz. bag romaine lettuce or field greens
- 2 cups shredded leftover rotisserie chicken (or any cooked chicken breast)
- 1 15 oz. can mandarin oranges, well drained
- 1/4 cup sliced almonds
- 1/2 cup chow mein noodles
- 1/2 cup bottled Asian salad dressing or the recipe below
- Chinese Chicken Salad Dressing
- 1/2 cup olive oil
- 1/4 cup rice vinegar
- 2 Tbsp. sugar
- 1 Tbsp. orange marmalade
- 1 tsp. soy sauce
- 1 tsp. freshly-ground black pepper
Preparation:
- Wash bagged lettuce and pat dry with paper towels. Chop finely into bite-size pieces. Transfer to a large salad bowl.
- Add chicken, mandarin oranges, almonds and chow mein noodles. Toss well.
- Pour bottled dressing over and toss. Or, whisk together all ingredients for the dressing, and toss well.
