Peanut Butter Sandwich Rolls

Stephanie Gallagher
Peanut butter sandwiches don't have to be boring. This recipe turns the average, everyday peanut butter sandwich into a fancy treat, just by changing the shape of it. These little rolls are the perfect bite-sized treat for school lunches, because they're easy to grab and go. You can switch the toppings to suit your taste. Try sliced strawberries on top of chocolate peanut butter or shredded apples on top of cinnamon peanut butter. Now that's a sandwich that won't be traded!

Ingredients:

  • 4 slices white bread
  • 1/2 cup peanut butter
  • 1/4 cup apple butter
  • 1/4 cup. raisins

Preparation:

  1. Using a rolling pin, roll each slice of bread several times to make it flatter and more pliable. Trim crusts.

  2. Spread two tablespoons of peanut butter on each slice of bread. Top with one tablespoon of apple butter and some raisins.

  3. Roll up sandwiches jelly-roll style. Cut into rolls and serve.
Makes 20 sandwich rolls (4 servings).
