Blueberry Muffins Recipe

These blueberry muffins are an ideal marriage of contrasting textures. The muffin part of these blueberry muffins is light, tender and bursting with fresh blueberries. The crumb stresel topping of these blueberry muffins is crunchy and sweet, like a good coffee cake topping. Make these blueberry muffins for your next special occasion brunch or just because you want something good to eat!

Yield: 12 blueberry muffins

Ingredients:

  • For Blueberry Muffins
  • 1-3/4 cups fresh blueberries
  • 1 cup + 1 Tbsp. all-purpose flour, divided
  • 1 cup whole wheat pastry flour
  • 2 tsp. baking powder
  • 1/2 tsp. kosher salt
  • 1/2 cup butter, melted
  • 2/3 cup sugar
  • 2 large eggs
  • zest of 1 lemon
  • 1 tsp. vanilla
  • 1/2 cup milk
  • For Crumb Streusel Topping
  • 3 Tbsp. all-purpose flour
  • 1/4 cup sugar
  • 1/4 cup butter, cut into 1-inch pieces

Preparation:

  1. Preheat oven to 375 degrees F. Grease a 12-cup muffin tin (compare prices), or line with paper liners.

  2. In a medium bowl, toss blueberries with 1 Tbsp. of all-purpose flour. Set aside.

  3. In another medium bowl, stir together remaining all-purpose flour, whole wheat pastry flour, baking powder and salt.

  4. In a large bowl, whisk melted butter, sugar, eggs, vanilla and lemon zest until smooth. Fold in half of the flour mixture, then half the milk. Repeat, stirring until all of the flour and milk are incorporated into the blueberry muffin dough. But do not overmix. (See Tips for Baking Muffins).

  5. Stir the flour-coated blueberries into the muffin batter. Fill muffin cups three-quarters of the way full (an ice cream scoop (compare prices) makes this job easy) with the batter.

  6. Make the crumb topping: In a small bowl, stir flour and sugar together. Cut in butter until mixture resembles coarse crumbs. Spoon crumb mixture over blueberry muffins.

  7. Bake blueberry muffins 20-24 minutes until firm to the touch and golden. Let blueberry muffins cool 10 minutes in the muffin tin. Then turn blueberry muffins out to cool completely.
