This dutch oven pancake recipe is made the same way all oven pancakes are made, but the topping sets this dutch baby pancake recipe apart from the rest. Sweetened cream cheese and berries make this dutch baby pancake almost like a danish and an oven pancake rolled into one. This oven pancake makes a perfect recipe for Easter, Mother's Day or Christmas brunch.

Total Time: 35 minutes
Yield: 2-3 servings
Ingredients:
  • 2 Tbsp. butter
  • 3/4 cup milk
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 2 Tbsp. sugar
  • zest of 1 orange
  • 1 cup ricotta cheese (part-skim is okay)
  • 3 Tbsp. cream cheese
  • 1/2 tsp. vanilla
  • 3-4 Tbsp. confectioner's sugar
  • 1-2 cups assorted fresh or frozen berries (thawed, if frozen)
  • additional confectioner's sugar for garnish
Preparation:
  1. Preheat oven to 425 degrees F. Place butter in a 9- or 10-inch deep dish pie plate. Heat in the oven 3-4 minutes until melted.

  2. Combine milk, flour, eggs, sugar and orange zest in a blender. Blend until smooth. Pour over melted butter. Bake 20-25 minutes until puffed and golden brown.

  3. Meanwhile, mix ricotta cheese, cream cheese, vanilla and 2 Tbsp. of confectioner's sugar until smooth. Taste, and add more confectioner's sugar if desired.

  4. Remove dutch baby pancake from oven. Slide carefully onto a serving plate. Spread ricotta cheese mixture on top of oven pancake. Top with berries. Dust with confectioner's sugar. Serve dutch baby pancake immediately.
