Matzoh brei is our standard breakfast during Passover. Fortunately, this matzoh brei is one of those easy Passover recipes, you can make even on busy weekday mornings.
Prep Time: 15 minutes
Cook Time: 10 minutes
Ingredients:
- 3 boards matzoh
- 1/3 cup boiling water
- 1 tsp. butter
- 4 large eggs
- kosher salt and pepper
Preparation:
- In a medium shallow bowl, break up matzoh into bite-sized pieces. Pour boiling water over the matzoh, to soften it.
- Heat butter in a medium skillet over medium heat.
- Beat eggs, salt and pepper together. Pour over the matzoh.
- Pour matzoh egg mixture into the hot skillet. Cook, flipping halfway through, until egg is set.
Note: You can either flip the matzoh brei as one large omelette, or break it up, like scrambled eggs.
Makes 2-3 servings.
