Matzoh brei is our standard breakfast during Passover. Fortunately, this matzoh brei is one of those easy Passover recipes, you can make even on busy weekday mornings.

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 3 boards matzoh
  • 1/3 cup boiling water
  • 1 tsp. butter
  • 4 large eggs
  • kosher salt and pepper

Preparation:

  1. In a medium shallow bowl, break up matzoh into bite-sized pieces. Pour boiling water over the matzoh, to soften it.

  2. Heat butter in a medium skillet over medium heat.

  3. Beat eggs, salt and pepper together. Pour over the matzoh.

  4. Pour matzoh egg mixture into the hot skillet. Cook, flipping halfway through, until egg is set.

    Note: You can either flip the matzoh brei as one large omelette, or break it up, like scrambled eggs.

Serve topped with jelly or cinnamon and sugar.

Makes 2-3 servings.
