Passover Macaroni and Cheese

Kids craving mac and cheese on Passover? With this Passover macaroni and cheese recipe, you don't have to deny them. Farfel replaces the macaroni, and the result is surprisingly tasty!

Ingredients:

  • 3 large eggs, divided
  • 3-1/2 cups matzoh farfel
  • 1 cup milk
  • kosher salt and black pepper, to taste
  • 1 cup part-skim ricotta cheese
  • 1 pint sour cream
  • 2 cups shredded cheddar cheese
  • 1/2 cup butter or margarine, cut into 1/2-inch chunks
  • 1/2 cup shredded American cheese

Preparation:

  1. Preheat oven to 350 degrees F. Spray a 9 x 13 pan with cooking spray.

  2. Beat two of the eggs in a small bowl.

  3. Place half of the farfel in the prepared pan. Pour the eggs over it.

  4. Beat the remaining egg with the milk, salt and pepper. Set aside.

  5. Beat the ricotta cheese and sour cream together. Set aside.

  6. Sprinkle half of the cheddar cheese over the matzoh farfel in the pan. Top with half of the ricotta mixture and half of the butter.

  7. Repeat layers: the remaining farfel, then the remaining cheddar cheese, the ricotta mixture and the butter.

  8. Sprinkle the American cheese over top.

  9. Cover with aluminum foil, and bake 30 minutes. Remove foil, and bake another 10 minutes or until golden and bubbly.
