Chocolate Peanut Butter Sandwich Cracker Cookies
If you like chocolate and peanut butter recipes, you will enjoy these chocolate-covered peanut butter sandwich crackers. They taste almost like Girl Scout Tagalongs, but with a slightly more salty flavor. Prep Time: 30 minutes

Ingredients:
- 1/4 cup creamy peanut butter, divided
- 16 round buttery crackers, such as Ritz crackers
- 1 cup semisweet chocolate chips
Preparation:
- Spread about 1 tsp. peanut butter on eight of the crackers (don't use all of the peanut butter; you will need about 1 Tbsp. of peanut butter to mix with the chocolate chips in step 3). Top with remaining eight crackers to make eight sandwiches.
- Place peanut butter sandwich crackers on a waxed paper-lined, freezer-safe plate, 1 inch apart. Freeze 20 minutes.
- Heat chocolate chips and remaining tablespoon of peanut butter in a double boiler or a saucepan over very low heat.
- Remove peanut butter sandwich crackers from freezer. Dip each sandwich into melted chocolate peanut butter mixture until completely coated. Return chocolate-covered peanut butter sandwich crackers to waxed paper-lined plate to cool completely. Refrigerate until ready to serve.
