Peanut Butter Cookies Dipped in Chocolate

If you're a fan of the combination of chocolate and peanut butter together, you will love these easy peanut butter cookies. Even better: They only have four ingredients. This recipe makes a great lunch box treat and is perfect to make with the kids, too.

Prep Time: 10 minutes

Cook Time: 12 minutes

Total Time: 22 minutes

Yield: 18 cookies

Ingredients:

  • 1 cup sugar
  • 1 cup peanut butter
  • 1 egg
  • 1 cup semisweet chocolate chips

Preparation:

  1. Preheat oven to 375 degrees F.

  2. With an electric mixer, beat sugar, peanut butter and egg together until smooth.

  3. Form into 1-inch balls. Place on ungreased cookie sheets. Flatten cookies gently with a fork, forming a criss-cross pattern.

  4. Bake 8-12 minutes until set. Remove to wire racks to cool completely.

  5. Line two cookie sheets with waxed paper.

  6. Place chocolate chips in a microwave-safe container. Heat on 50% power for 60 seconds. Stir, and repeat until chips are completely melted.

  7. Dip cooled peanut butter cookies into melted chocolate, so the cookies are halfway covered. Place on prepared wax paper-lined cookie sheets to cool.
