Yield: 18 cookies
Ingredients:
- 1 cup sugar
- 1 cup peanut butter
- 1 egg
- 1 cup semisweet chocolate chips
Preparation:
- Preheat oven to 375 degrees F.
- With an electric mixer, beat sugar, peanut butter and egg together until smooth.
- Form into 1-inch balls. Place on ungreased cookie sheets. Flatten cookies gently with a fork, forming a criss-cross pattern.
- Bake 8-12 minutes until set. Remove to wire racks to cool completely.
- Line two cookie sheets with waxed paper.
- Place chocolate chips in a microwave-safe container. Heat on 50% power for 60 seconds. Stir, and repeat until chips are completely melted.
- Dip cooled peanut butter cookies into melted chocolate, so the cookies are halfway covered. Place on prepared wax paper-lined cookie sheets to cool.
