Cool and Fruity Pie Recipes for Lazy Summer Days

Summer and pies go together like sand and surf. And with these easy recipes, you can enjoy different summer pies every night of the week.

Although all of my fruit pies taste great with ripe, in-season fruits, feel free to substitute frozen fruits when necessary (if, for example, you run out of fresh fruit or you want a shortcut, as with my peach pie -- there's no need to peel and quarter frozen peaches).

Just about all of these pies can be made in advance, and most freeze well, too. The ice cream pies can be frozen for several weeks.

Fruit Pie Recipes

  • Blueberry Crumb Pie Recipe - Instead of a double crust, this blueberry pie has a sweet and crunchy oat topping that makes a lovely contrast to the juicy blueberry filling. You can serve this pie warm or cold.

  • Fresh Peach Pie Recipe - This double crust pie is a fantastic way to enjoy fresh peaches. Be sure to let this pie rest at least 15 minutes (preferably 30 minutes) to give the peaches a chance to settle. Otherwise, the filling will be runny when you cut it. Serve this pie warm with a scoop of vanilla ice cream.

  • Cherry Pie Recipe - Although the recipe calls for frozen cherries (because they come pre-pitted, so they're less work for you), this pie tastes great made with fresh cherries, too. Any kind of sweet cherry will do - bing cherries, ranier cherries, whatever you have on hand.

  • Blueberry Pie Recipe - This double crust blueberry pie is an excellent way to enjoy fresh blueberries. I like to serve this pie with a dollop of whipped cream.

Cream Pie and Ice Cream Pie Recipes

  • Chocolate Pudding Pie Recipe - This simple pudding pie is made with instant chocolate pudding. Homemade whipped cream and a garnish of fresh raspberries and shaved chocolate really takes this pie over the top.

  • Easy Key Lime Pie Recipe - This key lime pie has an unusual ingredient -- Greek yogurt -- that not only gives this pie a lighter, creamy texture than traditional key lime pie, but also adds a bit of nutritional value, too.

  • Coconut Cream Pie Recipe - Two kinds of coconut -- coconut milk and sweetened flaked coconut -- give this pie deep coconut flavor. And because this recipe starts with a pre-made crust, it's a cinch to prepare.

  • Margarita Pie Recipe - Don't let the name worry you. There is nothing alcoholic in this refreshing pie, and the kids will adore the lemon-lime flavor. The crushed pretzel crust is a perfect salty contrast to the sweet filling of this pie (and it will remind adults of margaritas).

  • Chocolate Chip Ice Cream Pie Recipe - This ice cream pie is like an ice cream sundae in every bite. Ice cream, chopped almonds and chocolate sauce give this pie an incredible contrast of flavors and textures. This is one of my family's favorite ice cream pies.

  • Grasshopper Pie Recipe - This pie is reminiscent of a dessert that was popular in the 1950s and '60s. Instead of creme de menthe, this grasshopper pie is simply made with peppermint extract and food coloring (no alcohol and cheaper to make, too). Kids love this pie.
