Chocolate Peanut Butter Pie

Ingredients:
- 1/3 cup plus 2 Tbsp. light cream
- 10 oz. semisweet chocolate chips
- 1 9-inch graham cracker crust
- 1 cup peanut butter
- 4 Tbsp. butter, cut into small pieces
- 3/4 cup confectioner's sugar
- 1 tsp. vanilla
Preparation:
- Start with the chocolate layer of your peanut butter pie: Place 1/3 cup cream in a microwave-safe container. Heat on high in 30-second increments until bubbles form around the edges, but cream is not boiling.
- Add chocolate chips to cream. Stir until chips are melted and smooth.
- Pour one-third of the chocolate mixture into the bottom of the graham cracker crust. Freeze 30 minutes.
- Preheat oven to 350 degrees F.
- Make the filling of your peanut butter pie: Place peanut butter and butter in the work bowl of a food processor, fitted with a metal blade. Pulse until smooth.
- Add confectioner's sugar, vanilla and 2 Tbsp. of the cream. Puree until smooth.
- Spread peanut butter filling over chocolate layer. Bake 10 minutes.
- Stir chocolate. Pour over peanut butter layer. Refrigerate 1-1/2 hrs. until firm.
