These tortilla pizzas are a great way to introduce kids to spinach. This flour tortilla pizza recipe makes four individual pizzas, so if one member of the family doesn't like an ingredient, you can customize the pizza to suit his or her tastes. Use the best-quality flour tortillas you can find for these tortilla pizzas.

  • 1/2 cup ricotta cheese
  • 1 Tbsp. olive oil
  • 1-1/2 tsp. Italian seasoning blend, divided
  • 1/2 tsp. garlic powder
  • 4 9-inch flour tortillas
  • 4 cups loosely-packed fresh baby spinach
  • 2 cups shredded mozzarella cheese


  1. Preheat oven to 400 degrees F.

  2. In a bowl, mix ricotta cheese, olive oil, 3/4 tsp. of Italian seasoning and garlic powder. Spread 1/4 of the mixture over each tortilla.

  3. Top each tortilla with 1 cup of baby spinach, and 1/2 cup of mozzarella cheese. Sprinkle the remaining Italian seasoning on top.

  4. Place tortilla pizzas on two cookie sheets. Bake pizzas 6-9 minutes, until the cheese is golden and bubbly.

No kids in the house, just us oldies, but we love the flavors of this easy pizza. I make a lot of tortilla pizzas so I'm always on the lookout for different ideas and this one is a good one. I did add a layer of very thinly sliced Spanish Salchichon for a little added flavor. And the pizzas were wonderful with Chateau St. Michelle Harvest Select Riesling.
