Mashed Potato Casserole

This mashed potato casserole is the perfect way to serve mashed potatoes for parties, potlucks and holidays, because you can easily feed a crowd. Plus, you can make this mashed potato casserole in advance.

Prep Time: 30 minutes

Cook Time: 1 hour

Ingredients:

  • 5 lbs. Russet or Yukon Gold potatoes, peeled and cut into 1-inch chunks
  • 1-1/2 cups sour cream
  • 1/4 cup butter
  • 2 tsp. minced garlic
  • 1 tsp. kosher salt
  • 1 tsp. freshly-ground black pepper
  • 1 cup shredded cheddar cheese

Preparation:

  1. Grease or spray a 9 x 13 casserole dish with cooking spray.

  2. Place potatoes in a large, heavy saucepan. Cover with water by one inch. Bring to a boil. Let potatoes cook, uncovered, until tender when pierced with a fork, 12-15 minutes. Drain.

  3. Mash with sour cream, butter, garlic, salt and pepper. Spread mashed potatoes into prepared casserole dish.

  4. Sprinkle with cheese. Refrigerate overnight.

  5. Preheat oven to 350 degrees F. Bake mashed potato casserole 55-60 minutes until heated through.
