This mashed potato casserole is the perfect way to serve mashed potatoes for parties, potlucks and holidays, because you can make it in advance and easily feed a crowd. Feel free to add your favorite mashed potato toppings to this casserole. For example, a sprinkle of chopped green onions, crumbled bacon, French fried onions or sauteed mushrooms would all be lovely on this casserole.

Ingredients:
- 5 lbs. Russet or Yukon Gold potatoes, peeled and cut into 1-inch chunks
- 1-1/2 cups sour cream
- 1/4 cup butter
- 2 tsp. minced garlic
- 1 tsp. kosher salt
- 1 tsp. freshly-ground black pepper
- 1 cup shredded cheddar cheese
Preparation:
- Grease or spray a 9 x 13 casserole dish with cooking spray.
- Place potatoes in a large, heavy saucepan. Cover with water by one inch. Bring to a boil. Let potatoes cook, uncovered, until tender when pierced with a fork, 12-15 minutes. Drain.
- Mash with sour cream, butter, garlic, salt and pepper. Spread mashed potatoes into prepared casserole dish.
- Sprinkle with cheese. Refrigerate overnight.
- Preheat oven to 350 degrees F. Bake mashed potato casserole 55-60 minutes until heated through.
