This chocolate zucchini bread recipe is one of those breads that tastes more like a cake than a bread, but you can get away with eating it for breakfast. Two kinds of chocolate and coconut make this recipe rich and sweet. I like dark chocolate chips for this zucchini bread, but most kids (including my own) will probably prefer semisweet or milk chocolate chips.

Ingredients:
- 1 cup flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp. baking soda
- 1/4 tsp. baking powder
- 1/4 tsp. kosher salt
- 8 Tbsp. butter, melted
- 3/4 cup + 2 Tbsp. sugar
- 2 large eggs
- 1-1/2 cups shredded zucchini
- 3/4 cup chocolate chips
- 1/2 cup sweetened flaked coconut
Preparation:
- Preheat oven to 375 degrees F. Grease a loaf pan (compare prices)
- In a medium bowl, whisk flour, cocoa powder, baking soda, baking powder and salt together. Set aside.
- In a large bowl, mix melted butter, sugar and eggs together until smooth. Stir in zucchini. Add dry ingredients, and mix well. Stir in chocolate chips and coconut.
- Spread chocolate zucchini bread batter into prepared loaf pan. Bake zucchini bread 50-60 minutes until a knife inserted in the center of the bread comes out clean. Invert chocolate zucchini bread onto a wire rack to cool completely
