Chocolate Zucchini Bread with Coconut

This chocolate zucchini bread recipe is one of those breads that tastes more like a cake than a bread, but you can get away with eating it for breakfast. Two kinds of chocolate and coconut make this recipe rich and sweet. I like dark chocolate chips for this zucchini bread, but most kids (including my own) will probably prefer semisweet or milk chocolate chips.

Prep Time: 15 minutes

Cook Time: 1 hour

Total Time: 1 hour, 15 minutes

Yield: 12 slices zucchini bread

Ingredients:

  • 1 cup flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1/4 tsp. kosher salt
  • 8 Tbsp. butter, melted
  • 3/4 cup + 2 Tbsp. sugar
  • 2 large eggs
  • 1-1/2 cups shredded zucchini
  • 3/4 cup chocolate chips
  • 1/2 cup sweetened flaked coconut

Preparation:

  1. Preheat oven to 375 degrees F. Grease a loaf pan (compare prices)

  2. In a medium bowl, whisk flour, cocoa powder, baking soda, baking powder and salt together. Set aside.

  3. In a large bowl, mix melted butter, sugar and eggs together until smooth. Stir in zucchini. Add dry ingredients, and mix well. Stir in chocolate chips and coconut.

  4. Spread chocolate zucchini bread batter into prepared loaf pan. Bake zucchini bread 50-60 minutes until a knife inserted in the center of the bread comes out clean. Invert chocolate zucchini bread onto a wire rack to cool completely
