Ingredients:
- 1-3/4 cups all-purpose flour
- 2 tsp. baking soda
- 2 tsp. pumpkin pie spice
- 4 Tbsp. butter, softened to room temperature
- 1 cup firmly-packed brown sugar
- 1/3 cup plain yogurt or sour cream
- 2 large eggs
- 1 cup canned pumpkin puree (not pumpkin pie mix)
- 1/2 cup cinnamon chips
Preparation:
- Preheat oven to 350 degrees F. Spray a loaf pan (compare prices) with cooking spray.
- In a medium bowl, whisk flour, baking soda and pumpkin pie spice together.
- In a large mixing bowl, beat butter with an electric mixer until smooth. Add brown sugar, and beat well.
- Add yogurt, eggs and canned pumpkin puree. Beat until well combined. Gradually add flour mixture, mixing until incorporated, but do not overmix. Stir in cinnamon chips.
- Pour pumpkin bread batter into prepared pan. Bake 50-60 minutes, until a knife inserted in the center of the pumpkin bread comes out clean. Let pumpkin bread cool 15 minutes before cutting.
