Cornbread with Corn

This cornbread recipe is sweet and cake-like, making this a perfect cornbread to go with chili. Frozen corn is mixed right into this corn bread recipe for extra flavor.

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Ingredients:

  • 1 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1/2 cup white whole wheat flour
  • 3-1/2 tsp. baking powder
  • 1 tsp. kosher salt
  • 1 large egg
  • 3/4 cup milk
  • 1/2 cup honey
  • 1/3 cup canola oil
  • 1/2 cup frozen corn

Preparation:

  1. Preheat oven to 400 degrees F. Grease a 9-inch square baking dish.

  2. Mix cornmeal, flours, baking powder and salt in a large bowl. In a small bowl, beat egg, milk, honey and oil. Pour wet ingredients into dry, mixing until dry ingredients are moistened and you can't see any lumps of flour. Stir in corn.

  3. Pour batter into prepared baking dish. Bake 20-25 minutes until a toothpick inserted in the center of the cornbread comes out clean.
