Ingredients:
- 1 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 1/2 cup white whole wheat flour
- 3-1/2 tsp. baking powder
- 1 tsp. kosher salt
- 1 large egg
- 3/4 cup milk
- 1/2 cup honey
- 1/3 cup canola oil
- 1/2 cup frozen corn
Preparation:
- Preheat oven to 400 degrees F. Grease a 9-inch square baking dish.
- Mix cornmeal, flours, baking powder and salt in a large bowl. In a small bowl, beat egg, milk, honey and oil. Pour wet ingredients into dry, mixing until dry ingredients are moistened and you can't see any lumps of flour. Stir in corn.
- Pour batter into prepared baking dish. Bake 20-25 minutes until a toothpick inserted in the center of the cornbread comes out clean.
