Sometimes the hardest part about getting a hot, home-cooked meal on the table every night is the side dishes. With these easy vegetable recipes, there is no need to worry. These dishes are simple to prepare, with few ingredients and require no special cooking techniques. Even better: The kids will love these dishes. Try them yourself, and let me know. Be sure to write reviews!
  1. Roasted Broccoli Recipe - When you roast vegetables, you bring out the natural sugars in them, and they actually become sweeter. Add a little kosher salt and Parmesan cheese, and you've got a winning side dish that goes with everything.

  2. Sauteed Zucchini Recipe - Slice zucchini into rounds, saute in butter and you've got a super simple side dish that will make your summer meals come alive. If you have a garden or know someone who does, this is an excellent way to use that bumper crop of zucchini. Serve this side dish with barbecued chicken or burgers.

  3. Roasted Potatoes Recipe - My grandfather used to make these potatoes practically every Friday night with his famous roast chicken. It was a meal that said "home" to me. And once you try these potatoes, I know you will feel the same way.

  4. Brussels Sprouts with Bacon Recipe - Brussels sprouts and bacon are a beautiful combination, and this recipe is an easy way to enjoy it. The secret to cooking Brussels sprouts perfectly is not to overcook them (overcooking is what makes them give off that unpleasant odor).

  5. Green Bean Casserole Recipe - This is the classic green bean casserole you eat every year for Thanksgiving. But it is so simple to make and goes well with everything, there's no reason to wait for Thanksgiving or Christmas to enjoy it. Make this dish extra special by topping it with gourmet crispy onions.

  6. Crockpot Rice - Think you need a rice cooker to get perfect rice? Think again. It's easy to make perfect rice every time with your slow cooker. Even better: This recipe takes all of 2 minutes of active prep time.

  7. Garlic Green Beans Recipe - It is amazing to me how a little addition like garlic can add so much flavor to green beans. This recipe goes with everything from pork to beef to chicken to pasta. Use a good-quality sea salt, like Maldon sea salt (compare prices) for this recipe. It makes all the difference.

  8. Mashed Sweet Potatoes and Carrots - This vitamin A-rich side dish is creamy and goes beautifully with turkey, chicken or beef. A touch of brown sugar, honey and butter make this recipe just sweet enough to appeal to kids.

  9. Roasted Green Beans Recipe - The first time I made these green beans, my kids said they tasted almost like French fries. Pretty high praise from them, to be sure. The secret is the way the roasting brings out the natural sugars in the green beans, of course. Add a sprinkle of sea salt, and you're good to go.

  10. Broccoli Mashed Potatoes Recipe - This recipe is like having two vegetables in one dish. It's also a fantastic way to get kids to enjoy broccoli. Feel free to add your favorite mashed potato add-ins to this recipe. Garlic, bacon and cheddar cheese would all make nice additions to this recipe.
