Brussels Sprouts with Bacon

Brussels Sprouts Recipe

Kids say they don't like Brussels sprouts, but half the time they've never even seen Brussels sprouts, let alone tried them. When I first made this Brussels sprouts with bacon recipe, my little one asked, "What are the mini lettuces for?" I didn't have the heart to lie, so I told her they were Brussels sprouts. She said, "Really? They don't look so bad."

Prep Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes

Ingredients:

  • 1-1/2 lbs. Brussels sprouts
  • 1 tsp. olive oil
  • 4 slices center-cut bacon
  • 1 tsp. balsamic vinegar
  • kosher salt and freshly-ground black pepper, to taste

Preparation:

  1. Wash and trim Brussels sprouts, and cut in half.

  2. Heat olive oil in a large skillet. Add bacon. Fry until crisp. Drain on paper towels.

  3. Add Brussels sprouts to skillet, and cook, stirring, until fork-tender, 2-4 minutes (it will depend on the size of the Brussels sprouts). Do not overcook, or Brussels sprouts will taste bitter.

  4. Add balsamic vinegar to Brussels sprouts. Remove Brussels sprouts with a slotted spoon. Transfer to a bowl.

  5. Crumble bacon over Brussels sprouts just before serving.
Makes 4 servings of Brussels sprouts with bacon.
