Brussels Sprouts Recipe
Kids say they don't like Brussels sprouts, but half the time they've never even seen Brussels sprouts, let alone tried them. When I first made this Brussels sprouts with bacon recipe, my little one asked, "What are the mini lettuces for?" I didn't have the heart to lie, so I told her they were Brussels sprouts. She said, "Really? They don't look so bad." Prep Time: 10 minutes

Total Time: 15 minutes
Ingredients:
- 1-1/2 lbs. Brussels sprouts
- 1 tsp. olive oil
- 4 slices center-cut bacon
- 1 tsp. balsamic vinegar
- kosher salt and freshly-ground black pepper, to taste
Preparation:
- Wash and trim Brussels sprouts, and cut in half.
- Heat olive oil in a large skillet. Add bacon. Fry until crisp. Drain on paper towels.
- Add Brussels sprouts to skillet, and cook, stirring, until fork-tender, 2-4 minutes (it will depend on the size of the Brussels sprouts). Do not overcook, or Brussels sprouts will taste bitter.
- Add balsamic vinegar to Brussels sprouts. Remove Brussels sprouts with a slotted spoon. Transfer to a bowl.
- Crumble bacon over Brussels sprouts just before serving.
Makes 4 servings of Brussels sprouts with bacon.
