Crunchy, salty and sweet flavors meet in this Brussels sprouts salad recipe, made with roasted Brussels sprouts, crisp apples and salty bacon. This salad makes a perfect potluck dish for winter parties and holidays. Serve this salad warm.

  • 1-1/2 lbs. Brussels sprouts
  • 2 Tbsp. olive oil
  • 1/4 tsp. kosher salt
  • 3 slices bacon
  • 1 large apple, diced
  • 1/4 cup shaved Parmesan cheese
  • juice of 1 lemon


  1. Preheat oven to 425 degrees F. Trim and quarter Brussels sprouts. Toss Brussels sprouts with olive oil and salt. Spread out in an even layer on a sturdy baking sheet. Roast 15-20 minutes, until lightly browned.

  2. Fry bacon until crisp. Drain on paper towels and crumble into a large salad bowl. Add Brussels sprouts, diced apples and Parmesan cheese. Squirt with lemon juice, and toss well.
