- 1-1/2 lbs. Brussels sprouts
- 2 Tbsp. olive oil
- 1/4 tsp. kosher salt
- 3 slices bacon
- 1 large apple, diced
- 1/4 cup shaved Parmesan cheese
- juice of 1 lemon
- Preheat oven to 425 degrees F. Trim and quarter Brussels sprouts. Toss Brussels sprouts with olive oil and salt. Spread out in an even layer on a sturdy baking sheet. Roast 15-20 minutes, until lightly browned.
- Fry bacon until crisp. Drain on paper towels and crumble into a large salad bowl. Add Brussels sprouts, diced apples and Parmesan cheese. Squirt with lemon juice, and toss well.
