Grilled vegetables are one of my "go to" side dishes in the summer. They're easy to make, and taste wonderful. Be sure to add the sea salt just before serving. It really brings out the flavor of these grilled vegetables.

Ingredients:

  • 8 oz. fresh mushrooms
  • 3-4 medium zucchini
  • 1/4 cup Italian salad dressing
  • 1/2 tsp. sea salt

Preparation:

  1. Clean mushrooms and trim stems.

  2. Wash zucchini and pat dry. Trim, and cut into 3/4-inch chunks.

  3. In a resealable plastic bag, combine vegetables and salad dressing. Refrigerate 15 minutes to 1 hour.

  4. Prepare grill or preheat a cast iron grill pan over medium heat on the stove.

  5. Grill vegetables 7-10 minutes over medium heat, turning halfway through.

  6. Sprinkle with sea salt just before serving.
