Kale Recipe

Kale is one of the healthiest greens around, but it can also be slightly bitter. Pancetta, an Italian bacon, adds a pleasant saltiness to this kale recipe and makes it appealing to kids.

Ingredients:

  • 1 bunch kale
  • 1 Tbsp. olive oil
  • 4 oz. pancetta or bacon, chopped
  • 1/2 tsp. kosher salt
  • 2 Tbsp. grated Parmesan cheese

Preparation:

  1. Bring a large (5-quart) pot of salted water to boil.

  2. Meanwhile fill a large bowl with ice and water.

  3. Wash kale, remove tough stems and chop into bite-sized pieces.

  4. Add kale to boiling water. Let boil 1 minute. With a slotted spoon, immediately transfer to ice water.

  5. Drain and pat dry with paper towels.

  6. Heat olive oil in a large skillet. Add pancetta and cook until crisp.

  7. Add kale and salt. Saute 30 seconds to 1 minute.

  8. Transfer to a serving dish. Top with Parmesan cheese.

Try w/ Turkey Bacon, Member c_onnie

I used proscuitto b/c I had it, but that added time b/c I trimmed the fat & cut/tore it into smaller pieces b/4 crisping it. It's thinness complicated the process. Next time I'll go w/ turkey bacon.
