Kale Recipe
Kale is one of the healthiest greens around, but it can also be slightly bitter. Pancetta, an Italian bacon, adds a pleasant saltiness to this kale recipe and makes it appealing to kids.Ingredients:
- 1 bunch kale
- 1 Tbsp. olive oil
- 4 oz. pancetta or bacon, chopped
- 1/2 tsp. kosher salt
- 2 Tbsp. grated Parmesan cheese
Preparation:
- Bring a large (5-quart) pot of salted water to boil.
- Meanwhile fill a large bowl with ice and water.
- Wash kale, remove tough stems and chop into bite-sized pieces.
- Add kale to boiling water. Let boil 1 minute. With a slotted spoon, immediately transfer to ice water.
- Drain and pat dry with paper towels.
- Heat olive oil in a large skillet. Add pancetta and cook until crisp.
- Add kale and salt. Saute 30 seconds to 1 minute.
- Transfer to a serving dish. Top with Parmesan cheese.
