Lemon and Garlic Green Beans

Green Beans with Garlic and Lemon

These green beans with garlic and lemon are a perfect partner for just about any main dish. Try serving these green beans with Italian meatloaf, lasagna, or lemon roast chicken.

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

Ingredients:

  • 2 lbs. fresh green beans, washed and trimmed
  • 2 Tbsp. olive oil
  • 1 clove garlic, minced
  • juice and zest of 2 lemons

Preparation:

  1. Bring a large pot of water to boil over medium-high heat.

  2. Add green beans, and cook for 5-7 minutes, until crisp-tender.

  3. Meanwhile, prepare an ice water bath by placing ice cubes in a large bowl and filling with water.

  4. Drain green beans, and immediately plunge into ice water bath.

  5. Heat olive oil in a large skillet. Add garlic and cook 1 minute.

  6. Add green beans and cook 1-2 minutes to coat with oil. Remove from heat.

  7. Toss green beans with lemon juice and lemon zest.

Serve immediately
