Noodle Kugel Recipe

Noodle kugel is a traditional Jewish side dish for holidays and special occasions. Kugel can be sweet or savory, and this one is definitely on the sweeter side. I serve it with my favorite beef brisket recipe and applesauce for everything from Rosh Hashana to Hanukkah.

Ingredients:

  • 16 oz. wide egg noodles
  • 6 large eggs
  • 16 oz. sour cream
  • 16 oz cottage cheese
  • 1 cup granulated sugar
  • 6 Tbsp. butter, sliced into chunks
  • .
  • For Topping:
  • 1 cup crushed graham cracker crumbs
  • 3 Tbsp. butter, melted
  • 1 cup chopped apples
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg

Preparation:

  1. Preheat oven to 350 degrees F. Spray a 9 x 13 pan with cooking spray.

  2. Prepare noodles according to package directions for al dente (in other words, if the package says 8-10 minutes, cook for 8 minutes).

  3. While noodles are boiling, whisk eggs in a large bowl. Stir in sour cream, cottage cheese and sugar.

  4. Drain noodles and toss with butter immediately. Mix into sour cream mixture. Pour into prepared pan.

  5. Stir together topping ingredients. Sprinkle around the edge of the kugel.

  6. Bake 50-60 minutes.
Makes 24 servings.
