Pineapple Casserole

Everyone needs a good pineapple casserole recipe. After all, pineapple casseroles are perfect for parties, potlucks, special occasions and just everyday dinners with the kids.

Ingredients:

  • 1 20 oz. can juice-packed pineapple chunks, drained
  • 1 16 oz. can crushed pineapple not drained
  • 1/4 cup. all-purpose flour
  • 3/4 cup sugar
  • 1 cup shredded cheddar cheese
  • 2 cups crushed bite-sized cheese crackers*
  • 3 Tbsp. melted butter

Preparation:

  1. Preheat oven to 350 degrees F. Spray a 2-quart casserole dish with cooking spray.

  2. Dump the pineapple chunks and crushed pineapple into the casserole dish. Stir.

  3. Sprinkle the flour evenly over the pineapple.

  4. Sprinkle the sugar evenly over the flour.

  5. Sprinkle the cheddar cheese on top.

  6. Stir together the crushed crackers and melted butter. Spread evenly on top of the cheese.

  7. Bake in preheated oven 25 to 30 minutes until golden brown on top.
Serves 6 to 8.

*To crush the crackers, place in a food processor fitted with the metal blade and pulse until coarse crumbs are formed. Or place in a gallon-size ziploc bag, seal, and pound with the side of a rolling pin.
