Everyone needs a good pineapple casserole recipe. After all, pineapple casseroles are perfect for parties, potlucks, special occasions and just everyday dinners with the kids.
Ingredients:
- 1 20 oz. can juice-packed pineapple chunks, drained
- 1 16 oz. can crushed pineapple not drained
- 1/4 cup. all-purpose flour
- 3/4 cup sugar
- 1 cup shredded cheddar cheese
- 2 cups crushed bite-sized cheese crackers*
- 3 Tbsp. melted butter
Preparation:
- Preheat oven to 350 degrees F. Spray a 2-quart casserole dish with cooking spray.
- Dump the pineapple chunks and crushed pineapple into the casserole dish. Stir.
- Sprinkle the flour evenly over the pineapple.
- Sprinkle the sugar evenly over the flour.
- Sprinkle the cheddar cheese on top.
- Stir together the crushed crackers and melted butter. Spread evenly on top of the cheese.
- Bake in preheated oven 25 to 30 minutes until golden brown on top.
*To crush the crackers, place in a food processor fitted with the metal blade and pulse until coarse crumbs are formed. Or place in a gallon-size ziploc bag, seal, and pound with the side of a rolling pin.
