Roasted Asparagus Recipe
This roasted asparagus makes a super simple side dish and a perfect way to enjoy fresh asparagus in season. The roasting really brings out the sweet flavor of the asparagus in this recipe. Use the leftovers of this roasted asparagus recipe for risotto or asparagus quiche.

- 1 lb. fresh asparagus
- 2 Tbsp. olive oil
- kosher salt and freshly-ground black pepper to taste
- Preheat oven to 425 degrees F. Wash asparagus and trim woody ends.
- Spread asparagus out in an even layer on a heavy baking sheet or roasting pan (I like to use my Mario Batali pizza pan (compare prices). It is an enameled cast iron pan and perfect for roasting vegetables.) Toss with olive oil. Season with salt and pepper.
- Roast asparagus 15-20 minutes, until browned and tender. Taste, and adjust seasonings.
