Caramel Corn and Craisins Snack Mix

This recipe is a fresh take on caramel corn. Sweet and crunchy, with a bit of saltiness, too, this caramel corn snack mix is perfect for parties.
Ingredients:
- 2 quarts popped popcorn, unpopped kernels removed
- 3/4 cup granulated sugar
- 1/2 cup firmly-packed light brown sugar
- 1/3 cup light corn syrup
- 1/3 cup water
- 3 Tbsp. butter
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1/2 tsp. vanilla
- 6 oz. sweetened dried cranberries, such as Ocean Spray Craisins
- 1 cup semisweet chocolate chips
- 1 cup honey roasted peanuts
Preparation:
- Place popcorn in a large bowl. Set aside. Line a baking sheet with waxed paper.
- In a medium saucepan, combined sugars, corn syrup and water over medium heat. Bring to a boil, stirring occasionally. Brush the sides of the pot with a pastry brush, dipped in water, to remove any sugar crystals. Boil until the mixture reaches 300 degrees F, as measured by a candy thermometer. This will take 6-8 minutes.
- Remove from heat. Carefully stir in butter, salt, baking soda and vanilla.
- Using caution, pour caramel mixture over popcorn, tossing gently to coat. Spread caramel corn out on prepared baking sheet in a single layer, breaking up the chunks. Caution: Caramel is hot! Do not break up chunks of caramel corn with your bare hands.
- Cool completely. Toss cooled caramel corn with remaining ingredients.
Serve immediately.
