This recipe is a fresh take on caramel corn. Sweet and crunchy, with a bit of saltiness, too, this caramel corn snack mix is perfect for parties.

Don't Miss: Popcorn Recipes

Ingredients:

  • 2 quarts popped popcorn, unpopped kernels removed
  • 3/4 cup granulated sugar
  • 1/2 cup firmly-packed light brown sugar
  • 1/3 cup light corn syrup
  • 1/3 cup water
  • 3 Tbsp. butter
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1/2 tsp. vanilla
  • 6 oz. sweetened dried cranberries, such as Ocean Spray Craisins
  • 1 cup semisweet chocolate chips
  • 1 cup honey roasted peanuts

Preparation:

  1. Place popcorn in a large bowl. Set aside. Line a baking sheet with waxed paper.

  2. In a medium saucepan, combined sugars, corn syrup and water over medium heat. Bring to a boil, stirring occasionally. Brush the sides of the pot with a pastry brush, dipped in water, to remove any sugar crystals. Boil until the mixture reaches 300 degrees F, as measured by a candy thermometer. This will take 6-8 minutes.

  3. Remove from heat. Carefully stir in butter, salt, baking soda and vanilla.

  4. Using caution, pour caramel mixture over popcorn, tossing gently to coat. Spread caramel corn out on prepared baking sheet in a single layer, breaking up the chunks. Caution: Caramel is hot! Do not break up chunks of caramel corn with your bare hands.

  5. Cool completely. Toss cooled caramel corn with remaining ingredients.
Serve immediately.
