This is a perfect fruit salad recipe for the height of summer when fresh berries are in season. Of course, you can make this fruit salad with any kinds of berries. My favorite mix is strawberries, blueberries and raspberries, but if you're a fan of blackberries or you happen to have access to a farmer's market or farm where golden raspberries are plentiful, feel free to use those.
Be sure to use plain yogurt for this recipe. A sweetened yogurt, such as vanilla yogurt, will be too sweet. If you like the tart flavor of plain yogurt, you can take the quantity of lemon curd down to 1/4 cup. It will still offer a nice punch of sweet, citrusy flavor, but won't overpower the yogurt.
Look for lemon curd at high-end grocery stores, such as Trader Joe's, Whole Foods or a gourmet store.
Don't Miss: Easy Summer Salads
Prep Time: 10 minutes
Total Time: 10 minutes
Yield: 8-12 servings
Ingredients:
- 2 cups sliced strawberries
- 1 pint blueberries
- 1-1/2 cups raspberries
- 1 cup plain Greek yogurt
- 1/3 cup lemon curd
Preparation:
- Combine the strawberries, blueberries and raspberries in a bowl. Transfer to a serving dish (I like to use a tall glass bowl with sides. It makes for a pretty presentation on the table when you can see the berries through the glass.)
- In a small bowl, stir together the yogurt and lemon curd. Spoon over the berries. Refrigerate until ready to serve.
