Cabbage Salad
I like to serve this health salad recipe with everything from fried chicken to bacon cheeseburgers. This health salad also makes a great potluck or picnic recipe.Prep Time: 1 hour, 20 minutes
Ingredients:
- 1 head cabbage, shredded
- 1 small green pepper, seeded and sliced
- 1 small red pepper, seeded and sliced
- 1 small yellow pepper, seeded and sliced
- 2 stalks celery, chopped
- 2 large carrots, peeled and shredded
- 1/4 cup diced onions
- 1/3 cup red wine vinegar
- 1/4 cup olive oil
- 3 Tbsp. granulated sugar
- 1/4 tsp. salt
- 1/4 tsp. freshly-ground black pepper
Preparation:
- In a large bowl, toss shredded cabbage, green peppers, red peppers, yellow peppers, celery, carrots and onions.
- Whisk together remaining ingredients. Pour over cabbage salad. Toss to coat well.
- Refrigerate at least 1 hour or as long as overnight.
