This recipe for broccoli salad makes a perfect partner for chicken kabobs or Mexican turkey burgers.
Prep Time: 20 minutes
Ingredients:
- 5 cups broccoli florets, chopped
- 1 10 oz. package broccoli slaw
- 1/2 cup sweetened dried cranberries
- 1/2 cup roasted, hulled sunflower seeds
- 3/4 cup cashews
- 3/4 cup mayonnaise
- 1/4 cup red wine vinegar
- 1/4 cup granulated sugar
- 1/2 tsp. kosher salt
- 1/2 tsp. freshly-ground black pepper
Preparation:
- Toss broccoli florets, broccoli slaw, cranberries, sunflower seeds and cashews together in a large bowl.
- Whisk together remaining ingredients. Mix into salad, until everything is well-coated.
- Refrigerate until ready to serve.
Note: This cold broccoli salad recipe can be made up to one day in advance.
