This Chinese noodle soup is one of those soothing noodle soup recipes you crave when you're feeling sick or you just want something good to warm you up from the inside out.
Because this noodle soup starts Ramen noodles, it couldn't be easier. If you can't find baby bok choy at your market, or your family doesn't like it, feel free to leave it out.
Ingredients:
- 1 tsp. toasted sesame oil (or canola oil)
- 2 cloves garlic, minced
- 2 scallions, finely diced (white and light green parts only)
- 1 tsp. fresh minced ginger
- 1 cup chopped baby bok choy leaves and stems
- 1 quart vegetable broth
- 1 cup water
- 1 3 oz. package oriental flavor Ramen noodles (save seasoning packet for another use)
Preparation:
- Heat sesame oil in a medium saucepan over medium heat. Add garlic, scallions and ginger. Cook and stir until fragrant, being careful not to let the garlic burn, about 1-2 minutes.
- Add baby bok choy. Stir-fry for 15-30 seconds.
- Add broth and water. Bring to a boil.
- Break noodles apart into smaller pieces, then add to the soup and reduce heat to low and cook 3 minutes.
