- Use baby spinach rather than regular spinach (it's more tender)
- Use plenty of bacon
- Cut the spinach into very small, bite-sized pieces to make it easier for kids to eat.

Total Time: 30 minutes
Ingredients:
- 1/2 lb. bacon
- 1/2 cup diced red onion
- 1/2 cup sliced mushrooms
- 16 oz. baby spinach
- 2 hard-boiled eggs, chopped
- 1/2 cup canola oil
- 1/2 cup granulated sugar
- 1/3 cup apple cider vinegar
- 1 Tbsp. Dijon mustard
- kosher salt and pepper to taste
Preparation:
- Cook bacon in a large skillet until crisp. Remove bacon from the skillet, leaving skillet on the heat. Drain the bacon on paper towels, and set aside.
- Add onion and mushrooms to the bacon drippings. Saute over medium heat until the vegetables are softened, about 3 minutes.
- Toss spinach, hard boiled eggs, bacon, onion and mushrooms together in a large salad bowl.
- In a small bowl, whisk together remaining ingredients. Pour over salad just before serving. Toss well.
