These easy pumpkin muffins are a cinch to make because they start with a cake mix. Bits of caramel and chopped walnuts provide a tasty topping for these muffins. I like to serve these muffins for breakfast on Thanksgiving or Christmas.

Ingredients:
- 1 18.25 oz. yellow cake mix
- 1-1/2 cups pumpkin puree
- 1 tsp. cinnamon
- 1/2 tsp. ground cloves
- 1/4 tsp. ground nutmeg
- 1 large egg
- 1/3 cup milk
- 1/2 cup chopped walnuts
- 1/3 cup caramel bits
Preparation:
- Preheat oven to 350 degrees F. Grease muffin tins or line with paper muffin cups.
- In a large mixing bowl, beat cake mix, pumpkin puree, cinnamon, cloves, nutmeg, egg and milk with an electric mixer until smooth.
- Fill muffin cups with pumpkin batter, about two-thirds of the way to the top. Sprinkle walnuts and caramel bits on top of muffins. Bake 18-23 minutes, until a knife inserted in the center of the muffins comes out clean.
