Drunken Noodles with Ground Turkey Meat

Drunken Noodles - A Ground Turkey Meat Recipe

This drunken noodles recipe is one of those ground turkey meat recipes that really appeals to kids. Although these drunken noodles with ground turkey are not overly spicy, if your kids really prefer bland food, you can leave out the jalapeno pepper.

Yield: 6 servings.

Ingredients:

  • 8 oz. medium rice noodles
  • 1 tsp. sesame or olive oil
  • 1 tsp. minced garlic
  • 1/4 tsp. minced fresh ginger
  • 1 medium jalapeno pepper, seeded and finely chopped
  • 5-6 spring onions, diced (white and light green parts only)
  • 1 lb. ground turkey meat
  • 1/3 cup soy sauce
  • 1/4 cup sweet Thai chili sauce
  • kosher salt and freshly-ground black pepper, to taste

Preparation:

  1. Prepare noodles according to package directions. Drain.

  2. Heat oil in a wok or large skillet over medium-high heat. Add minced garlic. Stir-fry for 20 seconds or so. Add minced ginger, jalapeno peppers and onions. Stir-fry for 1-2 minutes.

  3. Add ground turkey, soy sauce and chili sauce. Cook, stirring, until turkey is browned and completely cooked through. Taste, and season with salt and pepper.

  4. Serve turkey mixture over rice noodles.
