Hot Turkey Salad

This hot turkey salad is based on the popular hot chicken salad recipes that are popular in the South. This version is made with leftover turkey, so it's a great recipe to make after the holidays. Add a spinach salad to this casserole, and you've got a complete meal.

Prep Time: 15 minutes

Cook Time: 20 minutes

Ingredients:

  • 2 cups chopped cooked turkey
  • 1 cup diced celery
  • 1/2 cup salted almonds
  • 1 cup mayonnaise
  • 1 Tbsp. lemon juice
  • 1/2 tsp. kosher salt
  • few dashes of hot sauce
  • 1 cup shredded cheddar cheese
  • 1 cup crushed potato chips

Preparation:

  1. Preheat oven to 400 degrees F. Spray a 1-quart baking dish or individual ramekins with cooking spray.

  2. Toss turkey, celery and almonds together in a bowl.

  3. Whisk together mayonnaise, lemon juice, salt and hot sauce. Add to the turkey mixture. Mix well.

  4. Spoon into prepared casserole dish or ramekins. Sprinkle with shredded cheddar and crushed potato chips.

  5. Bake 10-15 minutes for individual ramekins or 20-25 minutes in a casserole dish.
Makes 6 servings.
