Turkey Casserole Recipe

This turkey casserole recipe is one of those easy one-dish meals that can be eaten right away or made ahead and frozen. It's a great way to use leftover turkey, too.

Ingredients:

  • 16 oz. frozen hash browns
  • 1 medium red pepper, diced
  • 1 medium green pepper, diced
  • 1/2 cup diced onion
  • 2 cups shredded cooked turkey
  • 12 oz. evapoarted milk (skim is okay)
  • 1 10 oz. can cream of mushroom soup
  • 1 cup shredded cheddar cheese, divided
  • 6-8 dashes hot sauce

Preparation:

  1. Preheat oven to 350 degrees F. Spray a 9 x 13 baking dish with cooking spray.

  2. Place hash browns in a large bowl. Break up any large, frozen chunks with a fork.

  3. Add red pepper, green pepper, onions, turkey, evapoarted milk, soup, 1/2 cup of the cheese and the hot sauce. Mix well. Pour into prepared pan. Sprinkle with remaining 1/2 cup of cheese.

  4. Bake on center rack of the oven for 45 minutes or until golden brown and bubbly.
